Aged red wine 2018

TASTING NOTE 
Visually, this wine offers a covered red garnet colour. Aromatic notes of blackberry jam, dried thyme, toasted bread, dates, cinnamon and quince on a slightly balsamic base. In the mouth, a subtle and delicate minerality, with a well-crafted structure where there are nuances of candied fruit, caramel, pistachio and coffee beans. Balanced and sturdy, but silky and providing  prolonged after- taste.

VINIFICATION
Elaboration of each variety separately. Destemming and crushing of grapes, and ferentation and maceration took an average of 26 days.

Controlled temperature during fermentation was at 24º C.

The yield wine / grapes was 50%, leaving aside the pressed wine that did not go to this blend. Removal of solids and kept in stainless steel until October 18 th 2019, when the 12 225 litre European oak barrels and 2 600 litre European oak barrels were filled.

Lightly toasted barrels were sourced from a number of artsans in norhern France

The wine was aged in this oak for 10 months.

August 12 th, 2020

PRESENTATION
Wooden case of 1 or 6 bottles. Especial Bordeaux bottle of 750 ml. Cork "extra" of 49 mm. Natural "extra" quality cork farmed in our estates.
